It felt like summer was inching its way in today, though Tom said it is supposed to be cooler for the rest of the week, so I guess spring is still hanging around. LB enjoyed a bit of nude time this afternoon to help cool off. We always put her on this blue mat to having her airing out because it is waterproof. When she gets off it, we return her to it and tell her to keep her "little bum" on the mat. So sometimes, she'll try to scoot around on her bum with the mat underneath her, bringing it along. It is too funny!I also picked today to cook LB's food up, and spending a good part of the day in the kitchen did not help with the heat. I made her a recipe out of the organic baby food cookbook from my mom: Pumpkin Stew-in-a-Pot. The finished, but un-pureed, result is below. The recipe calls for pumpkin (obviously), onion, apple, raisins, vegetable stock, basil, and beef, pork, or beans, so I used Great Northern beans. I also substituted some of the pumpkin for sweet potatoes since my little one is such an s.p. fiend. When I selected this recipe, I didn't realize it was so labor intensive. Not only did it involve all the veggie prepping, but I also had to boil (the beans), steam (the pumpkin and potato), saute (the onion and apple), simmer (everything together but the pumpkin and potato), and finally bake it all together. Actually, the final step is the pureeing. But it did smell super yummy baking in the oven; it reminded me of the smell of stuffing on Thanksgiving. Mmmmm. And LB happily gobbled a bowl of it down for dinner, so it was worth all the hard work.
