A Lovely Weekend

From the photo above, it definitely looks like LB enjoyed her weekend! Or was slightly traumatized by it!

Last week Tom started a new, part-time job at the college. Plus, both LB and he both had little colds. Needless to say, we were glad to see the weekend had arrived and with a little bit of sun to boot!

On Saturday afternoon, we walked up our street to the local PA sculpture garden and enjoyed a walk in the woods looking at some art pieces.
LB made a quick dash to escape Mama and Papa!




But we eventually caught up with her.

Sunday morning we went down to the pier where we saw more art,
and enjoyed a breakie out!
Sunday meant more gorgeous sunshine for the happy LB.



And on Sunday night, Tom and I tried our hands at a gourmet dish:
I've always wanted to attempt a lasagne. I always thought that it would be quite the undertaking, and now that I've made one, I can see that in theory they are very easy to make. However, this particular vegetarian lasagne was not all that easy to make. It involved making our own pistachio pesto, scorching and removing the skins of the red peppers, cooking eggplant for 45 minutes, and constantly stirring some white sauce. While it was a labor intensive effort, it was fun to cook with my hubby.

Ours wasn't as pretty as the one featured in the picture, but yum, yum! It was so good! And it was so big. I think it will feed us for a week!
